In the rules manager I just want to see over a period, how many signals are generated (not just the numbers, but date and time also) for a simple rule like this:

buy = cross(ema5, ema14);

How do I see this?

You have to create a custom metric for this or you can use the simulator tool.

Do you have any example for the custom metric? In case of simulator, will it store all the signals, with date and time?

For a custom metric example, please do a search in the sharing server.
For the simulator, the "Trades" tab of the report lists all trades with date and time.
